Because they are fundamental to a stable, sustainable civil society.

A brief look through human history will clearly show that any system of governance that flies in the face of the will of the governed will not last, and will cause enormous amounts of pain and bloodshed in the process.

We can debate endlessly about various methodologies of governance (and should constantly), but the will of the governed is the ultimate bottom line. You can fool some of the people all of the time, and all of the people some of the time, but you can’t fool all of the people all of the time. Eventually the citizens must be respected to a certain degree, or things will inevitably decline into chaos. I’d say we are currently witnessing just that in several places in the world.
