Amylases break down starches and other carbohydrates into disaccharides, and digestive enzymes such as sucrase, lactase, and maltase break down disaccharides into absorbable simple sugars (monosaccharides) Proteases break down proteins into peptides, and peptidases break those peptides down into absorbable amino acids.

The food we eat is complex in nature , it contains complex molecules . Digestive enzymes break down these complex molecules into smaller simpler molecules so that they can be absorbed by the walls of the intestine .
