Hydrogen gas is not evolved upon reaction of metals and nitric acid because nitric acid is a strong oxidising agent which oxidises Hydrogen gas into water.
Calcium is a very reactive metal so it occurs mostly in combined state in nature by reacting with atmospheric oxygen or other non metals.
Sodium and Potassium are highly reactive alkali metals which react explosively and vigourously upon coming in contact with air or water. Hence to prevent such dangerous reactions, they are immersed under kerosene where they are unreactive.
