Proteins are digested by the enzymes called as proteases. Proteases are secreted in the stomach to initiate protein digestion. During intestinal digestion of proteins, trypsin plays a vital role. Protein digestion is brought over by pepsin, trypsin and other exopeptidases.
*Tyrpsin, the enzyme secreted by pancreas and thrown into the small intestine is in its inactive form trypsinogen. Trypsinogen is a proteolytic enzyme that is present in the pancreatic juice. In the intestine Trypsinogen is activated into trypsin by the action of enterokinase secreted by intestinal cells. This trypsin acts on partially digested proteins, the peptides into smaller blocks called as amino acids. This process is called as trypsinisation.
 *Pepsin in stomach also aids in protein digestion. Pepsin secreted by the chief cells in the stomach in the form of inactive pepsin. It gets activated to pepsin in the presence of HCl.Proteins are converted into peptides by the action of pepsin.  
 *Rennin is a protein digesting enzyme that curdles milk by changing caseinogen into insoluble casein. Rennin is only present in calf gastric juice. The process of curdling or coagulating milk is carried out by pepsin in human beings.
