The digestion of protein start in stomach. Pepsin is the enzyme which works on proteins. Our stomach releases gastric juice for this purpose. Gastric juice consists of pepsin, mucus and hydrochloric acid (HCl). HCl creates an acidic medium which facilitates(initiates) the action of pepsin. Due to presence of HCl, the gastric juice is acidic in nature.
