1st CASE: Inside refrigerator, the temperature is low which inhibits the growth of fungi and the bread remains fresh.

2nd CASE : Bread outside the refrigerator has nutrition, humidity (as water is sprinkled on it) and the temperature is idle for growth of fungi, so we see a spongy layer after 2-3 days.
