This is because zinc being a more electropositive metal than copper displaces it from its solutions. CuSO4 + Zn --> ZnSO4 + Cu CuSO4 is blue in colour . But once all of the Cu ions are displaced by Zn ions, Blue to Colourless change is observed because ZnSO4 in aqueous solution is colourless This is a type of Displacement reaction.
