The reason is that the Pancreatic juice which is secreted by the pancreas are -

Trypsin - Breakdowns the Proteins.

Pancreatic amylase - Breakdowns the carbohydrates.

Pancreatic lipase - Breakdowns the fats.

And if pancreas will be removed then these all juices which are secreted by it, they will be not present so it will effect all these components.
