In general, all the natural substances in their original state have minimum entropy. When there is any damage or decomposition taking place that converts the substance in to any other state of matter (solid / liquid / gas) the entropy increases.
Now, in usual cases it is said that entropy of a liquid is greater than the entropy inside a solid (because molecules are more ordered and tightly packed in solid as compared to liquid).
Because, the albumin protein present in egg white has a coiled structure in raw state of egg. When heat is given, this structure changes to linear thus increasing the entropy.
