Mean = (sum of 5 numbers)/5
27 =(sum of 5 numbers)/5
27*5 = sum of 5 numbers
135 = sum of 5 numbers

Mean = (sum of 5 numbers - excluded no.)/4
25 = (135 - excluded number)/4
25*4 = 135-excluded number
100 = 135 - excluded number
Excluded number =135-100
Excluded number = 35
