The manufacturer of chips fill plastic bags containing chips with nitrogen gas to prevent the chips from being oxidised and turn rancid.

because nitrogen prevants the chips from rancidity.. whereas if chips come into the contact of oxgen .. they get oxidised . and their taste changes .. and produces foul smell frm chips. so thats why , nitrogen is filled in the packets of chips in order to prevant them from becoming oxidised
