the stainless steel vessels in kitchen have copper coating on the bottom

stainless steel is not a good conductor of heat. Where as copper is a good conductor. Stainless steel vessels are are coated with copper at the bottom to increase conductivity of heat. this will help in cooking faster and using less fuel.

Generally we see the copper coating on the bottom of stainless steel . because it prevents from the black colour when we burn . and also copper keeps healthy to us. ..

It absorbs excess heat ...

Hence copper coating is given on the stainless steel.
