It is because

1 per hectare production of sugarcane is higher in Southern India because black soil is suitable for cultivation of sugarcane

2 sucrose content in the sugarcane is higher in in Maharashtra and Karnataka which means more and more sugar can be produced from less sugar cane

3 Mills And machines are new in Southern States which increase the productivity

4 crushing season for sugarcane is longer in Southern States

5 co-operatives are more successful in Southern States

(i) The sucrose content of sugarcane grown is higher in Peninsular India. Thus, more sugar can be extracted from the same amount of sugarcane.

(ii) The crushing season is longer in Peninsular India, as it does not get very hot in the summer compared to North India.

(iii) Sugar industries are mostly cooperatives and cooperatives are more successful in the Southern states.
