It cannot be written as S because S has been chosen as a symbol for Sulphur So, They have to take Sodium's latin name for its symbol...

1)the first letter of the element's name
2)the first letter of the element's name in capital with the second letter in small
3)the first letter of the element's Latin name.
this is done to avoid confusion.
