The thermodynamic coordinates are used to plot isolines, which are lines along which a property is constant. For eg. Isotherms for constant temperature lines; Isobars for constant pressure lines.

 

Also, real substances which have phase changes, like water to water vapor or water to ice, can also be plotted using thermodynamic coordinates.
