Word for Mac can't display embedded PDF files.
Here's what to do to get the PDF file. (Requires Stuffit, which is free)
In Finder, change the file extension from .dotx to .zip
Right-click the zip file and choose Open With > Stuffit 16
Nagivate the Word folder to the Embeddings folder
Drag the PDF file to your desktop
Double-click the PDF file to open it in Preview or your default PDF viewer
