The evaporation of water from fruits and vegetables is known as transpiration. Water loss is a major contributor to product degradation, such as wilting and shivering, which can have serious implications (Ryall and Pentzer 1974). Water loss, in fact, is first and foremost a loss of marketable weight, which ultimately has a negative impact on look (wilting and shriveling). Additionally, increased softness, a loss of crispness and juiciness, and a decline in nutritional content degrade the sensory quality (Irtwange 2006).

Because CO2 must be allowed to permeate the leaf to allow photosynthesis, yet water loss (transpiration) must be reduced to avoid desiccation, drought stress, and plant mortality, coordinated management of gas exchange is critical to land plant life.

By using waxes and packing in plastic sheets to function as barriers between the produce and the environment, as well as controlling R.H., temperature, and air circulation, transpiration may be managed.
