Tartaric acid (2,3-dihydroxybutanedioic acid) is a naturally occurring dicarboxylic acid containing two stereocenters. It exists as a pair of enantiomers and an achiral meso compound. The dextrorotatory enantiomer of (R,R)-L-(+)-tartaric acid is widely distributed in nature. It is present in many fruits (fruit acid), and its monopotassium salt is found as a deposit during the fermentation of grape juice. Pure levorotatory -tartaric acid is rare. Tartaric acid is a historical compound, dating back to when Louis Pasteur separated it into two enantiomers with a magnifying lens and a pair of tweezers more than 160 years ago.
