The water stored in the earthen pots is cool because of the evaporation process. The earthen pot is usually made up of mud or clay. The earthen pot has tiny pores through which the water evaporates. The mud layer absorbs all the heat from the water vapour. This causes constant absorption of heat from the water. The evaporated water through the pores like sweat from the human body causes chillness from outside the pot. Though there is a small amount of water is lose through evaporation, the water inside the earthen pot remains cold.
