What are emulsions? Howare they classified ?

Sushdivik83: Emulsifiers and emulsifying particles tend to promote dispersion of the phase in which they do not dissolve very well. For example, proteins dissolve better in water than in oil, and so tend to form oil-in-water emulsions (that is, they promote the dispersion of oil droplets throughout a continuous phase of water)

★If Any Doubt Ask It★

An emulsion is a mixture of two or more liquids that are normally immiscible (nonmixable or unblendable).

It means that in an emulsion the dispersed phase and dispersion medium are both liquids.

There are two basic type of emulsions: oil in water and water in oil.

Answer:

There are two types of emulsions as follows :

(1) Emulsion of oil in water : An emulsion in which an oil is a dispersed phase and water is a dispersion medium is called an emulsion of oil in water.

For example : milk.

(2) Emulsion of water in oil : An emulsion in which water is the disperse phase and an oil is the dispersion medium is called as water in oil emulsion.

For example : Codliver oil.
