Signal processing used to be the art and science of designing electrical circuits to process analog signals, i.e. an electrical potential varying with time. For instance a radio signal encodes a sound into some high frequency wave and you need a circuit that'll decode that wave to get back the signal. Same with TV. Some other circuits change the contrast of your TV image, or the volume of your radio etc.
