The soda commonly used in kitchen for making tasty crispy pakoras is baking soda.
It is a mild non corrosive base. It is the major constituent of baking powder. Sometimes, it is added for faster cooking. Chemically it is sodium hydrogen carbonate. It is produced by using sodium chloride as one of the raw material.


NaCl + H2O + CO2 + NH3 ------ NH4Cl + NaHCO3 .


Uses of baking soda:

1. For making baking powder which is a mixture of baking soda and a mild edible acid such as tartaric acid.

2. Sodium hydrogen carbonate is also an ingredient of antacid.

3. It is also used in Soda acid fire extinguisher.
