When an egg is boiled,its protein gets denatured and unfolds into a rubbery insoluble mass and the protein cannot return to its original state.Such denaturation is irreversible denaturation.Denaturation does not change the primary structure,but results from a rearrangement of secondary and tertiary structures.

On boiling , proteins of egg gets denatured or coagulated and water of egg get absorbed in it .
