what do you mean by aerial oxidation . how it can be involved in rancidity and corrision.

Aerial oxidation is the term used for the reaction in which  air or oxygen from air is used to oxidize other substance.

In both the corrosion and rancidity the action of air is important. When a metal is exposed to air it start damaging because of the chemical action of air which result in corroded metal.

Similarly rancidity is the development off-odor and off-flavor of foods especially containing fats. When the oil or fat containing food are exposed to open air it start deteriorating the quality of food of  due to the action of oxygen from air and cause rancidity.

Aerial Oxidation means the process in which air is used to oxidize the other substances.
Aerial oxidation plays a major role in Corrosion and Rancidity.

Corrosion :
 Corrosion is defined as slow process where metal turn into their metal oxides by the action of air and water present in the atmosphere.
Example :Rusting of Iron.

Corrosion Can be prevented by painting and by galvanizing  iron with Zinc, Chromium and Nickel.

Rancidity :
The condition produced by aerial oxidation of fats and oils in foods marked by unpleasant smell and taste.rancidity spoils the food materials prepared in fats and oils which are exposed to air for a longer time.

Hence rancidity is prevented by:
1. packing the fat and oil containing food in Nitrogen gas 
2. Storing food in air tight container.
3. Refrigerating the food.
4.By adding Anti oxidants like BHA and BHT
