Dehydration:

It is the process of removal of water molecules in a chemical reaction.

Neutralization:

It is the reaction in which an acid and base react with each other to neutralize each other's effects to form a salt and water.

For example:

HCl + NaOH ----> NaCl + H2O

Water of crystallization:

It is the fixed number of water molecules for one formula unit of a molecule. It influences the physical and chemical properties is the substance. For example, one molecule of Gypsum (CaSO4.2H2O) contains 2 molecules of water of crystallization.
