By looking at the formula of 'g' we see that R(Radius or height from the center) is inversely proportional(denominator) to 'g' so it varies with height....

Acceleration due to gravity means acceleration produced because of gravity. gravity is the force that attract body .
It vary with height because any planet or moon etc attract any body when the body is closer then the gravity will strong and when body is far then gravity is weaker.
