Depends on the species and ages. Black bears will do their best to avoid brown bears, and brown bears will chase off adult black bears. Fights over food are usually pretty short, as the black bear are significantly smaller and tend to flee from fights. Cubs are probably going to get eaten if they are left unprotected. Bears (especially males) are known to eat cubs of their own species, so a brown bear eating a black bear cub is something that happens.
Polar bears and grizzlies can occasionally interact, but generally their habitats do not overlap (although climate change is increasing the overlap). These interactions are rare enough I don't think anyone can say for sure what is a normal interaction. There have been a very small number of of grizzly/polar bear hybrids found in the wild so we know interbreeding can happen.
