When dough is left open for a few days, it emits foul smell which is due to action/growth of bacteria, fungus and some other Saprophytic fungi, these fungi breaks down the carbohydrates and that's why it emits foul smell.
So it's obvious that if fungus grow up on food, it becomes unfit for eating and emits foul smell.
