It allows the red blood cell to contain more hemoglobin and, therefore, carry more oxygen molecules. It also allows the cell to have its distinctive bi-concave shape which aids diffusion. This shape would not be possible ifthe cell had a nucleus in the way.

Hey mate,
Very Nice question
The RBCs are used to transport oxygen to each and every cell.
They do this with the help of haemoglobin.
Now if you think nicely.
You'll find that the RBCs are nothing but cells
So mate if the RBCs have nucleus then a much of the total volume of the cell will be equipped with the nucleus.
Thinking about our body design or design of any large animal
This will lead to less oxygen supply.
So the evolution made RBCs aka Red Blood Cells contain no Nucleus.

Hope it helps.
I liked the curiosity you had.
