The sodium chloride (common table salt) dissolves and dissociates into sodium cations and chloride anions. If you add enough salt, you’ll eventually reach the saturation point at which no more salt will dissolve; however, solubilization is a dynamic process—sodium and chloride ions will continue to enter the solution but an equal number will leave the solution. This is the process of recrystallization, in which the larger crystals—having less surface area than smaller crystals per unit volume and weight—grow at the expense of smaller crystals.
Dissolving salt or many other chemicals in water will also depress the freezing point—which is why salt is put out on walkways and highways in freezing weather—and increase the boiling point.
