It stops growing in that direction. The meristem gives rise to new tissue, and without it no growth occurs. It’s also involved with hormone signalling and when the apical meristem is destroyed, auxiliary meristems begin to develop. That’s why if you want a hedge to fill out and become dense, you trim the new growth to encourage side branches to develop.
