When dry raisins and apricots are left for some tine in pure water they swells up, because water enters them by the process of osmosis. Osmosis is the movement of water from a higher concentration to a lower concentration through a selectively permeable membrane. When it is transfered to a sugar solution, it will loss water by osmosis, and then shrinks. The concentration of water is lower in sugar solution than in dry raisin or apricot.
