when hydrogen is added to vegetable oil which is an unsaturated compound it gets converted to a Vanaspati ghee  a saturated compound.

the name of this reaction is hydrogenation.

Nickel acts as a catalyst.

the difference of the both is that the vegetable oil is unsaturated and Vanaspati ghee is a saturated compound.

The reaction is called hydrogenation of oils and in this reaction and the difference between the veg oil and the product formed so is that the product so formed is hard but the veg oil is not as hard and here the alloy Nickel acts as a catalyst.
