There's actually a few reasons for this! One is the extremely low thermal conductivity of the vacuum of space. In darkness, the suit radiates heat while in sunlight, it's absorbing the radiation. They have cooling and heating gear as part of the EVA suits to maintain a nominal temperature.

The other big reason is a very revolutionary insulation called aerogel. It was invented in the 1930s and didn't find it's niche until the space program. In layman's terms, it is a layer of silica bubbles filled with CO2 and the bubbles are very very small. Air is a very good insulator if you can avoid convection (movement of air particles) and that's the main principle in the aerogel.

Finally, there's the under clothing the astronauts and cosmonauts wear to keep warm.
