Explanation:

Take the case where a bullet hits a steel plate. The KE of the bullet is transferred to the plate. If the plate moves it has gained kinetic energy. If the plate deforms the kinetic energy of the bullet is transferred to strain energy in the plate (and the bullet). If the bullet bounces off the target, some of the energy tranferred to the plate is transferred back to the bullet (think of a person councing on a tranpoline KE of the person is transferred into strain energy in the trampoline, which is then transferred back to the person).
