What happens to Washing soda in food?

Baking soda is added to bread and cake which on heating forms Na2Co3 + H2o + CO3. Na2CO3 is not edible and can damage tissues then why is it added to food?

washing soda is used only for washing not in food items.
baking powder on heating or mixing in water releases CO2 that causes bread or cake to rare making them soft and sponge
