An alkali is a soluble base which reacts with acids to form salt and water only.

A salt is a ionic compound is made from the reaction between an acid and a base.

It has 3 carboxylic acid groups which is boxed in red below:

These 3 acid groups react by replacing the H+ ions with Na+ ions. The H+ ions react with OH− ions to form water.
