When hydrogen is added to a vegetable oil it changes into a solid form called vanaspati ghee in the presence of nickel called catalyst through the process of hydrogenation.

This process is known as hydrogenation.

During hydrogenation vegetable oil is reacted with hydrogen at 60°C in the presence of Nickel catalyst.

In this reaction double bonds are converted to single bonds.

In this way unsaturated fats are made to saturated fats.

This saturated fat could be margarine in this case.

The difference in their physical properties is that it is harder than the vegetable oil.
