In the beginning only water is removed and the former blue hydrated copper sulfate will turn colorless (aka ‘white’).
CuSO4 • 5H2O →∆→ CuSO4 + 5 H2O
If you heat it up further it will lose SO3 depending on the chosen gas atmosphere:
CuSO4 →∆(under air)→ CuO + SO3
