it is converted into curd (dahi)

its taste changes and becomes sour due to the breakdown of lactose into lactic acid because of the lactic acid bacteria which also lower the P H P_H PH of the milk due to the formation of lactic acid.

During summers, when milk is kept open, it gets spoilt due to oxidation. For formation of curd, it must coagulate with lacto bacillus bacteria that converts lactose sugar to lactic acid
