The gaseous bubbles of CO2 break free from the liquid soda and float to the top of the bottle. These tiny pits are perfect nucleation sites where CO2 bubbles can be formed. When I drop a mentos into a bottle of soda, it sinks to the bottom and thousands of CO2 gas bubbles instantly form on the surface of the mentos.
