If the soda is left open, additional carbon dioxide will slowly escape into the air. Under warm conditions, the carbon dioxide leaves the solution faster.

According to Henry's law, the amount of dissolved gas is proportional to the pressure on the surface of the liquid.

Hence, when the cap is opened, the pressure on the surface of the liquid is released, and hence the gases dissolved also evolve out with a fizz.
