What is an emulsifying agent ? What role does it play in forming an emulsion ?

Emulsifying agents (emulsifiers) are substances that are soluble in both fat and water and enable fat to be uniformly dispersed in wateras an emulsion (they stabilize emulsions). They act by reducing the interfacial tension between the two phases and forming a stable interfacial film.

emulsifying agent means emulsifying agent only don't know that much also the role of forming an emulsion is forming an emulsion only... haaaaaa!!!!!!!
