Baking powder is a mixture of sodium hydrogencarbonate and a solid edible acid such as tartaric acid or citric acid.
When baking powder mixes with water present in dough made for baking cake, then sodium hydrogencarbonate reacts with tartaric acid to evolve carbon dioxide gas. The carbon dioxide gas produced gets trapped in wet dough and bubbles out slowly making the cake to rise and become soft and spongy.
