The cotelydon is the nutritive part of a seed. The embryonic plant is attached to the cotelydon and uses it as food until it grows roots and leaves to make its own food. When the plant breaks through the soil, the cotelydon is often still attached.

When you eat legumes (beans, etc.), nearly all of what you're consuming is the cotelydon. The tiny "nib" is the embryonic plant.
