Sorting is the separation of a mixture of different stuff and arranging it in a manner that you need. For example you can sort official clothing and casual from a heap of clothes.

Filtering on the other hand is choosing the best while leaving that which you do not want, for example filtering herbs from a drink, you only want the flavor in your drink so you filter out the herbs.
