Electric potential is related to the potential of a charged particle to do work. The easiest way to understand how this works is to compare to the more familiar gravitational potential.

You may be familiar with gravitational potential energy, which is the ability of a massive object to do work when placed in a gravitational field. When you lift the object, it gains potential energy and can do more work if it were to drop. But potential energy depends on both the height and the mass of the object. If we want to just consider the effect of height, we define the potential of the gravitational field. Each point in space will have its own gravitational potential, and two points at the same height have the same gravitational potential. It is important to realize that this is not the same as potential energy, but it is related because multiplying gravitational potential by mass will give the object's potential energy.

Electric potential works in a similar way. When you move a charged particle against the push of an electric field, you are increasing its potential energy. If we divide that energy by the charge (instead of mass), we can define the electric potential in that way. This means that each point in space can have a different electric potential. The potential will increase in the direction that a (positive) charge must be pushed to oppose the electric field. The electric field lines point in the direction that a positive charge will be pushed by the field, so the electric potential will decrease in the direction that the field lines point. Numerically, you can look at the electric potential as being the potential energy of a unit charge (+1), but this hides the fact that electric potential and potential energy are dimensionally different quantities with different units. SI units of electric potential are Volts, and potential energy is in Joules.
