EMULSIFICATION is the process of breaking down of large lipid droplets into small droplets. This provides a larger surface area on which enzyme pancreatic lipase can act to digest the fats into fatty acids and glycerol which are easily absorbed through small intestines. Bile salts are extremely important for emulsification of fats.
