What is emulsification ? Name the gland related to it and its secretion

The fat eaten along with the food are big in size i.e they have big globules. The enzyme acting on fat does not act properly on this big globules. Therefore they are converted into small globules of fat. This is done by the bile salts present in the bile juice secreted from the liver. This process is known as emulsification of fat. This increases the surface area of fats and thus, help the digestive enzyme - lipase to absorb the fats.
