The breaking down of fat into soluble particles by bile juice is called emulsification of fat. It is necessary because our body is not capable to digest unsoluble fat.

In general, Emulsification is the process of breaking down of the large fat globules into smaller globules and makes them water-soluble and necessary for enzymes to act on large globules of fat.
